Nachbil Riesling
Why this is on Broken Compass: Boutinot declare organic. Boutinot declare natural. Boutinot declare sustainable. Supplier sheet: organic. Supplier sheet: sustainable. Supplier sheet: natural. Producer notes: wild or indigenous yeast. Producer notes: no added sulphur.
What to expect
A finely tuned, ripe and expressive Riesling with searing acidity balanced by great fruit concentration and perfectly judged residual sugar. Closest in style perhaps to a Halbtrocken from the Pfalz, this is refreshing yet deeply complex and with a finish that just goes on and on.

On the table
This wine pairs well with dishes with some heat, think Asian pork belly or spicy Mexican dishes.
